Confession time: I like cooking, but at the same time, I don’t. I don’t like slaving over a hot stove, especially after a tiring day at work. My preferred cooking method is “set it and forget it” or “pop it in the oven”. Over the years, I have gathered some favorite slow cooker and (more recently) Instant Pot recipes that I keep coming back to, because they are tried-and-true.

I am often asked for some favorite Instant Pot recipes especially, since Instant Pots are a relatively new phenomenon.
Did you know that slow cooker recipes can be adapted to the Instant Pot? If the slow cooker recipe says to cook on high for 4 hours or low for 8 hours, it will likely be perfect in the Instant Pot on high pressure in 25-30 minutes.
Without further ado, in no particular order, here are my 10 favorite slow and pressure cooker recipes.
1. Lasagna (slow cooker)
I won’t lie, I find home-made lasagna terribly time-consuming and almost not worth the effort. However, this recipe is really easy! Plus, my casserole Crock Pot makes it even easier. To make a vegetarian-friendly version, you could probably replace the ground beef with beans and/or TVP. One cup of dry TVP, once reconstituted, equals about one pound of ground beef.
2. Creole chicken and sausage (slow cooker)
This is great if you like spicy, flavorful food. I used regular Italian sausage in this recipe instead of Andouille, and it turned out well.
3. Seitan (Instant Pot)
By itself, seitan isn’t a meal, but rather an ingredient. It is a protein-packed meat alternative made from vital wheat gluten (i.e. gluten flour) and, depending on how you prepare it, can have different textures. If I knead it in with my stand mixer two minutes (as directed in the recipe), it does have a tougher texture than cooked chicken. However, kneading it for less time yields a more tender protein.
4. Butter chicken (Instant Pot)
Out of all recipes on this list, I made this most recently. It is so yummy! Bonus: If you make a batch of the above seitan dough, you can add it to the butter chicken in lieu of the actual chicken, and cook it all for 16 minutes instead. I guess it would be “butter seitain” then…
5. Cheeseburger mac (Instant Pot)
This right here? Amazing. Kid approved, too. You can use different noodles to switch up the texture. It is more hearty and arguably more healthy than boxed Hamburger Helper.
6. Mac & cheese (Instant Pot)
Fair enough, you don’t really need an Instant Pot to make this. Although, I believe that pasta cooks up a bit quicker with the Instant Pot than on the stove. Regardless, this Instant Pot mac & cheese is amazing. I like to add a bit of nutritional yeast to it as well.
7. Chicken pot pie (slow cooker)
This is much easier than doing a chicken pot pie from scratch! The canned biscuits the recipe suggests go wonderfully with it.
8. Mongolian beef (Instant Pot)
I really like the flavor of this. Maybe it’s the sesame oil. I love sesame oil! Serve with rice, sesame seeds and green onions. Yum!
9. Jambalaya (slow cooker)
This is another great one for the hot and spicy lovers. Despite this being a slow cooker recipe, this was the first thing I cooked in my Instant Pot. I was anxious to have jambalaya, and I wanted to play with my new toy as well!
10. Vegetable barley soup (Instant Pot)
Yes, this is my own recipe. But that doesn’t mean it can’t make the list! My recipe was inspired by a mushroom barley soup that I had found online. Sadly, I can’t find the recipe anymore. I love this soup regardless.
